How I Discovered Food Science
I still remember being in high school and getting an assignment in a class called something like “family life.” Our guidance counselor told us to go to the library, research different careers, and come back ready to share what we wanted to become.
Back then, this meant real books. No Google. No internet searches. I found a very thick red career encyclopedia and started flipping through it. That is when I saw a career I had never heard of before: Food Scientist.
Food Scientist? That sounded interesting.
I read what food scientists do and how someone becomes one, and I was hooked. When it was my turn to share in class, I said I wanted to be a food scientist.
The response I got was not encouraging.
Instead of asking questions or supporting my interest, the guidance counselor commented on how skinny I was. I think she assumed food science was the same as nutrition and decided, based on how I looked, that I did not “fit” the role.
That comment stuck with me. It still does.
It is a reminder of how powerful words can be, and how careful we should be when talking to young people who are just beginning to imagine their future.
Choosing Food Science Anyway
Even though that moment was discouraging, it did not stop me.
I pursued food science anyway.
Today, I hold an undergraduate degree in food science and a PhD in cereal science. My research focuses on the properties of edible bean flours and how they can be used in food products. I also teach and conduct research at a university.
That early moment did not define me. It motivated me.
So What Is Food Science?
When I tell people I am a food scientist, I often get a confused look. Sometimes they ask the question out loud. Sometimes they just think it.
What exactly is that?
Some students jokingly say food science is “the science of food.” While that is technically true, it does not explain much.
A better way to describe food science is this: food science applies science to how food is made, processed, stored, and enjoyed by consumers.
People want food that is safe, healthy, convenient, affordable, and good tasting. Meeting those expectations requires an understanding of what food is made of and how those parts interact.
A Simple Example: Why Apples Turn Brown
When you slice an apple, it starts to turn brown. This is called enzymatic browning.
Inside the apple are compounds called phenols. When the apple is cut, those compounds come into contact with an enzyme called polyphenol oxidase and oxygen from the air. Together, they create brown-colored compounds.
If you dip the apple in lemon juice, the browning slows down. Lemon juice is acidic. The acidity lowers the pH of the apple surface, which reduces enzyme activity.
There are other ways to control browning too. Heating the apple briefly can deactivate the enzyme. Removing oxygen through vacuum packaging also works.
You cannot fix the problem unless you understand what is causing it. That is exactly what food scientists do every day.
Where Food Scientists Work
Most food scientists work in food manufacturing, but that is not the only option.
Food scientists can work in food manufacturing companies, food service operations like hotels and large restaurants, private research laboratories, government and regulatory agencies, and universities.
Some focus on production. Others focus on quality. Some work in research and product development.
Food Science Jobs in Production
Food scientists working in production help make sure food is produced efficiently and correctly. They monitor processes, adjust conditions, and solve problems when something goes wrong.
Imagine bread coming out of the oven too dark, even though the temperature and baking time are the same as usual. What caused it?
Was there too much sugar in the recipe? Was fermentation too long? Was there too little salt? Did a new baking pan transfer heat differently?
A food scientist uses scientific knowledge to investigate these possibilities and determine what needs to change.
Food Science and Quality Control
Food scientists in quality control focus on whether products meet specific standards.
They ask questions like whether juice tastes sweet enough, yogurt is acidic enough, or bread has the right texture.
Based on testing and observation, they work with production teams to make adjustments and keep products consistent.
Food Science in Research and Development
Research and development is where new food products are created.
This might include developing new flavors, improving nutrition, or designing better packaging. It is creative, problem-solving work.
Early in my career, I worked at a food research institute and helped develop products like mushroom jam, mushroom jelly, mushroom pickles, and mushroom soup mixes. Some of those ideas sounded strange at first, but many tasted surprisingly good.
