Objectives 

By the end of this lesson, students will be able to:

  1. Identify key personal hygiene practices for maintaining food safety.
  2. Demonstrate knowledge of proper cleaning and sanitizing procedures in food handling environments.
  3. Explain the importance of workplace hygiene in preventing contamination.
  4. Apply the principles of health and hygiene in personal and workplace settings.

Materials and Resources 

  1. Whiteboard and markers 
  2. Projector and computer 
  3. PowerPoint slides or visuals showing examples of personal and workplace hygiene practices 
  4. Sanitizing products for demonstration (gloves, disinfectant spray, hand sanitizer, etc.) 
  5. Printed worksheets (formative assessment) 
  6. Videos or online resources on food safety and hygiene 
  7. Access to the classroom sink for handwashing demonstration 

Introduction/Hook (5 minutes) 

  1. Begin by asking, “What do you think is the most important thing you can do to keep food safe?” Then, allow students to brainstorm. 
  2. Share a real-life scenario of foodborne illness caused by poor hygiene in a food service environment (e.g., an outbreak due to cross-contamination). This will catch their attention and highlight the relevance of the topic. 

Direct Instruction (15 minutes) 

  1. Personal Hygiene Practices: Explain the importance of handwashing, wearing clean clothing, and avoiding jewelry in food service. Demonstrate the proper handwashing technique and when to wash hands in food preparation.
  2. Workplace Hygiene Procedures: Discuss how to maintain clean surfaces, utensils, and equipment and the importance of regular cleaning schedules. 
  3. Preventing Cross-Contamination: Explain how to separate raw and cooked foods, use color-coded utensils, and avoid cross-contact with allergens. 
  4. Employee Health: Discuss why food handlers should report illnesses and stay home if sick to avoid spreading bacteria or viruses.
  5. Visual aids (PowerPoint slides) will illustrate each point, showing images of proper hygiene, clean food prep areas, and common hygiene issues.

Guided Practice (10 minutes) 

  1. Class Demonstration: Divide students into groups and have them role-play different hygiene practices. One group will demonstrate the proper handwashing technique using the classroom sink, another will show proper glove usage and replacement, and a third will practice sanitizing surfaces with disinfectant spray. 
  2. Discussion: After the demonstration, ask the students to reflect on how these practices prevent foodborne illness. Engage them by asking, “What would happen if these steps weren’t followed?”

Independent Practice (5 minutes) 

Have students work independently on a worksheet where they match a food hygiene image on the left with the correct text description of the image or clue on the right.

Formative Assessment (5 minutes) 

A short quiz (5 multiple-choice questions) to test their understanding of the hygiene practices discussed during the lesson. This will help identify any areas that need clarification.

Summative Assessment 

Homework Assignment: Students will be asked to create a cleaning and sanitizing checklist for their school cafeteria. The checklist should include tasks that must be completed daily, weekly, monthly, and seasonally (3 – 4 months or with the changing seasons). They will bring this checklist to the next class for review and discussion.

Closure (5 minutes) 

  1. Recap the main hygiene practices discussed in class: personal hygiene, cleaning/sanitizing, and workplace cleanliness.
  2. Emphasize the importance of following these procedures to prevent contamination and foodborne illness. 
  3. Encourage students to think about how they can apply these practices in their everyday life, even outside of food preparation.
