Introduction

Have you ever wondered why fresh pineapple can be tricky to use in some desserts? It’s all because of a tiny but powerful ingredient inside the pineapple called an enzyme. Enzymes are special proteins that act like tiny machines in living things. They help speed up chemical reactions in our bodies and in other organisms. Think of enzymes as workers in a factory, each with a specific job to do.

Fresh pineapples contain an enzyme called bromelain. This enzyme belongs to a group called proteases. Proteases have one main job: they break down proteins. It’s like they have scissors that can cut up long chains of proteins into smaller pieces.

Gelatin, which we use to make jiggly desserts, is made of proteins. When we mix gelatin with water and let it cool, these proteins link together to form a network that traps water, creating that familiar wobbly texture.

When we add fresh pineapple to gelatin, the bromelain enzyme gets to work. It starts cutting up the gelatin proteins, preventing them from linking together properly. This is why your dessert might stay liquidy instead of setting into a firm jelly.

But here’s the twist – canned pineapple doesn’t cause this problem! Why? Because during the canning process, the pineapple is heated to high temperatures. This heat destroys the bromelain enzyme, making it inactive. So, canned pineapple can’t break down the gelatin proteins.

This experiment isn’t just about making desserts. It shows us how enzymes work in the real world and how food processing can change the chemical properties of what we eat. Understanding enzyme activity is important in biology, cooking, and even in many industrial processes.

Materials

  • Fresh pineapple
  • Canned pineapple
  • Gelatin dessert mix
  • 3 small bowls
  • Spoons
  • Hot water
  • Refrigerator

Procedure

  1. Prepare the gelatin mix according to the package instructions.
  2. Pour equal amounts of the prepared gelatin into three bowls.
  3. Label the bowls: “Control”, “Fresh Pineapple”, and “Canned Pineapple”.
  4. Add a spoonful of chopped fresh pineapple to the “Fresh Pineapple” bowl.
  5. Add a spoonful of canned pineapple to the “Canned Pineapple” bowl.
  6. Leave the “Control” bowl as is.
  7. Gently stir each bowl.
  8. Place all three bowls in the refrigerator for 2 hours.
  9. After 2 hours, remove the bowls and observe the results.
